When you think of a waffle, what comes to mind? Do you think of the normal waffle, crispy on the outside but fluffy and soft on the inside and topped with fruits, maple syrup or honey? As for me, what comes to mind is a lot of recipes and different flavours away from the normal norm.
I decided to make an egg waffle but when I made it, it seemed boring with no toppings. I had a leftover chicken that I had bought from chicken-inn. I decided to play around with it and make something funky and zesty out of it.
- Two Eggs.
- Shredded sirimon, mozzarella cheese.
- A pinch of salt.
- 10mls of milk.
- Diced Onions ( Optional).
- Two tablespoons of oil.
- A serviette.
- Two tablespoons of oyster sauce.
If you want your eggs fluffier, always use milk and also adds some volume to the size of the eggs being cooked.
On an empty bowl, beat your eggs and whip it up. Add your pinch of salt and whip it, till it gets consistent then add your milk and cheese and whip it to your satisfaction.
Place the oil on the waffle maker and use the serviette to spread the oil on the rest of the maker and also it helps in removing excess oil on the waffle pan. Pre-heat the maker for 2-3 minutes then pour your eggs and let it cook for 3-4 minutes.
As the eggs cook, remember the leftover chicken from chicken-inn, that I had told you earlier?? Yes, that chicken! We are revamping it into something good.
Shred-it into smaller pieces without bones. Place the shredded chicken on a plate, pour the oyster sauce and mix. Make sure the chicken is well coated. I thought of an easier method by just placing it in the microwave for 2 minutes to dry the sauce and make the chicken sticky. Which saves time and cost, IDK, maybe??
After the eggs have cooked, remove it and plate it.
Plating the egg waffle is pretty easy. Place the egg waffle on top of each other, add the chicken on top and finish it off with the leftover mozzarella cheese.
Serving for One and serve hot!
