I’ve always been a sweet tooth, ever since I discovered sugar. As I was searching and stalking my favorite foodies on the gram, I found a snack called ‘bombolone’ and decided to make it.
I know most of you have no idea what a bombolone is. A bombolone is an Italian filled donut which is eaten as a snack or as a dessert. It is also known as ‘bomba’ in some regions of Italy. The luhya or African in me doesn’t know how to different a snack or a meal, we just classify them as food 😂😂😂.
The beauty in being African is food never goes bad, as long as you are a foodie. Am I right or am I right???
The greatest thing about them, they are so easy to make, just like mandazis. Here goes the recipe……….
- Three cups of all purpose baking flour.
- Two eggs.
- A tablespoon of powdered vanilla extract.
- Half a cup of sugar.
- Two tablespoons of yeast.
- A cup of warm water.
- A pinch of salt.
- Quarter cup of melted butter or cooking oil. (Any is optional).
Start by placing the yeast in the warm cup and stir it. Let it rest for 5 minutes as the yeast activates. If bubbles start forming, then its ready.
In a separate bowl place all dry ingredients and mix it. I don’t have a particular way of placing ingredients so I just placed all my wet ingredients and started kneading my dough.
After its ready, cover the dough and let it rest for an hour or so. Roll the dough on a flat surface and use a doughnut cutter to achieve the desired shape.
Place the doughnuts on a surface and cover for 30mins, after it has risen then it means it’s ready to be cooked. Place in hot oil and fry them 2 mins each till golden brown or dark brown.
When ready cut at the side and fill it in with anything you desire. I decide to fill it with Nutella and garnished it with desiccated coconut.
