Ladies have multiple personalities, we change depending on anything. Potatoes are same as ladies, they can be cooked in different ways depending on the mood or anything! for example, you could make mashed, boiled, fried, fries and e.t.c
I’ve been trying to learn and get more ideas and new content for the blog and I stumbled on a cooking technique of, one pan dish. Whereby, you cook everything using one pan. The foodie that I am, decided to try it out. One needs to be alert because different foods cook at different temperatures. This technique is the best because it doesn’t involve a lot of dishes and actually saves time and energy for some of us who don’t like washing dishes.
A casserole is a lifesaver! I bought mine and I didn’t know what to cook on it, it looks fragile and one might think it will break once in the oven but no, the thing can handle heat like no one’s business. You can cook a lot of things on this dish i.e lasagna (think we just found our next dish), stuffing and whatever creative idea you get.
Since potatoes were available I decided to make fried potatoes with chicken.


  1. 10 large potatoes.
  2. 6pcs of drumsticks.
  3. 4 cherry tomatoes.
  4. 3pcs of garlic.
  5. 2 tablespoons of coconut oil.
  6. A tablespoon of garam masala.
  7. A tablespoon of sweet pepper.
  8. A tablespoon of tandoori chicken powder.
  9. A tablespoon of Nescafe coffee (optional).
  10. A tablespoon of black pepper.
  11. Two tablespoons of salt.
  12. A tablespoon of vinegar.
  13. Two tablespoons of tamarind juice.

On a heated pan place the gar-am masala, sweet pepper, tandoori chicken powder and salt and dry roast the spices, be keen while dry roasting them. Roasting the spices helps in intensifying flavors of the spices when incorporated in foodstuff. Roast the spices, when they start to smell toasty and ooze out a fragrant. Place them on the side for them to cool.
In a pan, place the drumsticks and score them by using a fork so as for the chicken to absorb the spices. Take the cooled spices and pour into the chicken and mix it up till every piece of chicken is covered in spice. In a small cup place the coffee and make a paste using the water and rub the coffee into the chicken. Also, pour in the tamarind juice and vinegar. Make sure each piece of chicken is covered in the marinade. Marinate it for 30 to an hour for an optimal mind-blowing taste in your mouth.

In a separate dish, wash the potatoes squeaky clean and dice them into desired shapes. For a crunchier feel don’t peel the potatoes. Dry the potatoes using a kitchen cloth and marinate them using: the coconut oil, garlic powder, salt for taste and also use black pepper.
Oil your casserole dish and place your potatoes. Afterwards, place the marinated chicken on top of the potatoes as desired. cut your garlic and sprinkle on the dish. Lastly, place your cherry tomatoes cut into half on the casserole dish.

In a heated oven, place the casserole and bake it for 40 minutes in 225 degrees. After every 20 minutes check the oven and turn your chicken for the other side to cook. If you are not satisfied with how crispy the potatoes are, you could add an additional 10mins on the oven timer.
Serve the potatoes, chicken with a mango salad.
Serving for four.
